
Egg bites make for quick and easy breakfast prep!
I love breakfast food, but I am not a fan of making breakfast while I am either half asleep or trying to run out the door! Que … these super easy egg bites that are prepped for the week and avoiding being in the kitchen in the morning but getting something better than a donut for breakfast! (Not saying there is anything wrong with a donut for breakfast! haha) Now that we are all thinking about donuts! haha
I used to always use milk in my eggs, until I tried cottage cheese in them! Milk in eggs dilutes the egg taste and can make them watery once cooled, can lead to dry eggs at the same time, also can lead to rubbery eggs! Using cottage cheese has solved all of those problems for me! Cottage cheese is low in fat, high in protein … so it’s a win!
Specifics
I like to use Eggland’s Best eggs. They are a good quality and taste delicious!
I also like to use Friendship California style Cottage Cheese, the taste is like no other! Consistency is perfect and the size of the curd is perfect as well!
Tips
I always make sure to crack each egg into a small container before adding to the large bowl. It has happened one to many times that a bloody egg was cracked into a full bowl of perfectly fine eggs! You live and learn! It also helps when you get an eggshell in the egg while cracking, so much easier than digging into a large bowl!
When I am removing the egg bites from the cupcake pan, I use a small spatula while they are still slightly warm. This helps with no sticking!
I then let them cool on a rack before placing into containers.
It is so important to make sure to let the egg bites cool completely before storing! If not, then you will be left with soggy eggs, no one wants that!
Storage
I keep them refrigerated in a tight container and portion them out for the week. I find the best quality is when they are used within a week! Anything more can be dicey, use you best judgement when it comes to spoiled food!

Egg Bites
Ingredients
- 10 Eggs
- 1/2 cup Cottage Cheese
- 1 cup Shredded Cheddar (feta can also be used)
- salt & pepper to taste
- Chives as a garnish
Instructions
- Preheat oven to 300 degrees
- Lightly grease cupcake pan
- Mix all ingredients in a large bowl
- Pour ingredients evenly into cupcake pan
- Bake for 30 mins. (When there is 10 minutes left you can add extra cheese on top if desired)
